Lettuce wraps with a Mexican twist

This past weekend, my friends and I took a girls trip to Knoxville to enjoy the day together. I really cherish those times because with the hectic schedule of work, school and home life it can be difficult to catch up.

After a full day of shopping we decided to grab a bite to eat at P.F. Chang’s because none of us can deny our love for lettuce wraps. There is something about the crunchiness of the lettuce and the heat of the filling that creates the perfect combination.

Ironically my aunt sent me a recipe for lettuce wraps this week as well, so I thought it was fitting that I share them with you. Hers were a bit different and add a Mexican twist!

Turkey Taco Lettuce Wraps

Ingredients: 1.3 pound ground turkey, 1 teaspoon garlic powder, 1 teaspoon cumin, 1 teaspoon salt, 1 teaspoon chili powder, 1 teaspoon paprika, ½ teaspoon oregano, ½ a small onion diced, ¾ cup of water, 4 ounce can of tomato sauce, 8 large iceberg lettuce leaves, ½ a cup of shredded cheddar cheese.

Instructions: Brown turkey in a large skillet, breaking it into little pieces as cooks. When no longer pink, add dry seasonings and mix well. Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes. Divide the meat equally amongst the 8 lettuce leaves and top with cheese! This is and easy and healthy meal that is family friendly for sure. Enjoy!
