Summer cooking in Bell County

Summer means the Middlesboro Farmers Market on Cumberland Avenue is open for business.

On Friday, Christy Blevins of the Bell County Cooperative Extension held a demo for summer recipes for anybody to try.

The recipes — cantaloupe bread and watermelon and cucumber salad. Free samples were offered as well as the demonstrations.

The recipes for the cantaloupe bread includes three eggs, one cup of unsweetened applesauce, one cup of sugar, one tablespoon of vanilla extract, two cups of pureed cantaloupe, one and a half cups of flour, one teaspoon of salt, one teaspoon of baking soda, three-fourths teaspoon of ground cinnamon, a half teaspoon of ground ginger.

The glaze consists of one half cup of butter, two thirds cup of brown sugar and one half cup of chopped pecans.

If you missed the live demonstration, Blevins will be holding monthly cooking demonstrations at the Bell County Extension Office in Pineville every last Monday of the month. The course is called Cooking with Christy, and they will be held at 1 p.m.

The demonstration classes will also include newsletters, recipe cards and hands-0n activities.
